QUICK & EASY VEGAN PIZZA

Happy April everyone! I cannot believe we are already a quarter way through 2018 and I haven’t even chosen a New Years resolution yet! This past Easter weekend I was able to spend some time at my mom’s home in Durbanville, where I caught up on some seeerious down time. The highlight of this down time was definitely this pizza creation – think mushroom and caramelised onion, topped with crispy cheesy kale and avocado. I mean, yum!

What I absolutely love about this pizza is the simple base. It’s just a wrap, you guys! Whole wheat, normal, whatever makes you happy, but this is an 8 minutes in the oven kinda pizza which is no fuss at all!

Ingredients
  • Wrap base of choice
  • Tomato paste (1-2 Tbsp per pizza)
  • Mushrooms (about 2 cups or more)
  • 1 Tbsp coconut oil or oil of choice
  • 1 red onion
  • 1 jalapeño (this gets sweet and tasty as you cook it so don’t worry about the spice!)
  • 1 handful of sweet rosa tomatoes
  • Olives
  • Kale (By far my favourite ingredient! You’ll see why once you try this.)
  • 1 Avocado
  • Nutritional yeast
  • Salt & pepper to taste

* What makes this pizza so simple is the base, but keep in mind that you can go crazy with whatever toppings you enjoy! No need to stick to my favourites!

Method

Step 1 is all about the prep! Slice your onion, mushrooms, jalapeño, tomatoes and olives while you wait for the stove to heat up. (Pre-cooking the toppings makes sure you have a yummy caramelised pizza rather than a dry one).

Add 1 Tbsp of coconut oil along with the sliced onion to a pan on a high heat and stir often for 5 minutes. Now you can throw in the mushrooms and sliced jalapeño with a pinch of salt and add a dash of water to the pan. Fry these for another 5 minutes while you wait for the oven to preheat (180°c).

*Your pan mixture should spread across 2-3 pizzas depending on the size of your wrap!

Take your wrap base and evenly spread on 1-2 Tbsp of tomato paste. Add your pan mixture, a few sliced tomatoes and olives and a generous amount of torn up kale leaves. Sprinkle nutritional yeast over the leaves and pop your pizza into the oven.

After about 8 minutes your wrap should start browning around the edges, depending on how crisp you like it, you can take it out now or after a further 2 minutes. Keep an eye not to burn!

At this point the kale has become the most delicious thing you have ever tasted. Trust me. Kale crisps are the new in thing and now you have them on your pizza! Super high in vitamins A, C and K which improve just about everything in our weird and wonderful bodies.

To serve

Top with avocado, because it is delicious and you can add a fruit to your meal in the easiest way, not to forget the healthy fats. Get those various food groups in!

I like slicing my pizza in 4 slices to make holding and folding a good option… I’m a pizza folder kinda girl. Trust me, you will NOT miss the cheese on this guy, it is bursting with flavour!
