I absolutely LOVE breakfast, and pancakes are often on the menu in our home. I decided to take my Simple Vegan Pancakes recipe (which can be found in my free eBook) and put a lemony spin on it. I was definitely inspired by a lemon, poppy seed muffin for this recipe, but instead of poppy seeds I decided to use my favourite superfood, chia seeds.This recipe takes 20 minutes to make which means these are a great weekend breakfast idea if your weekday mornings won’t allow for this much time in the kitchen each morning – but goodness are they worth the 20 minute wait!
These pancakes are…

Prep time: 5 minutes
Total time: 20 minutes
- 1 ripe banana
- 1 cup oats
- 1 cup soy mylk
- 3 Tbsp fresh lemon juice
- 3 Tbsp chia seeds
- 1 Tbsp baking powder (optional)
- 1 Tbsp apple cider vinegar (optional)
- ¼ cup water
Throw together all the ingredients into a blender (except the chia seeds) and blend until smooth.
Add the chia seeds to the mixture and stir in with a spoon.
Heat a non-stick pan over a medium heat.
Spoon on 1 tsp on coconut oil per 3 pancakes. 3 pancakes can be made at one time if making smaller shapes. I like making smaller ones to make my stack look more impressive, about 7cm in diameter.
Flip your pancakes once little bubbles start to show in the centre.
Allow the other side to cook and then stack ’em up!
Top with a good squeeze of lemon juice, a few extra chia seeds, and a sprinkle of shredded coconut. Another option is a drizzle of honey or maple syrup.
