KALE, PECAN & CRANBERRY SIDE SALAD

Here it is, the perfect side salad for any tasty meal! I created this Kale, Pecan & Cranberry side salad with The Simplest Eggplant Lasagne in mind, and because something as tasty as this lasagne recipe needs no help from sides to shine, I kept it super simple with bold and fresh flavours. With the lemon tahini dressing, the flavour profile of this side is simply delicious. The sweet cranberries and toasted nutty pecans just further enhance all this deliciousness, and you can be sure that a generous amount of both is added to this dish.

Ingredients
  • 1/2 cup tahini
  • 1/4 cup lemon juice
  • 1/2 cup dried cranberries
  • 1/2 cup pecans
  • 2 Medium bunches of Lacinato kale (destemmed)
  • Salt & pepper to taste
Method

Preheat your oven to 180c. Place your pecans on a roasting tray and toast them for 8-10 minutes.

Destem and shred the kale.

Combine the lemon juice and tahini in a small mixing bowl. Mix well until a smooth liquid has formed.

Add the lemon tahini dressing to the bowl of kale and toss together until all the kale leaves are evenly coated. Then add the remaining ingredients to the bowl. Feel free to mix the pecans and cranberries through, although leaving a few for the topping is always pretty.

Add a crack of salt and pepper and your simple side is ready to be served.

To serve

Serve cold as a side to a warm dish (like my yummy lasagne, The Simplest Eggplant Lasagne).
