Last week I had a killer craving for rice paper rolls. If you are not a fan or have not yet given them a try, trust me, they are a treat! As someone who absolutely loves veggie sushi, these green summer rolls provide an extremely similar taste – which is full on yumminess! I pair mine with pickled ginger and light soy sauce to really get into that sushi realm, but you can pair it with any dipping sauce of your choice!

Here it is, the perfect side salad for any tasty meal! I created this Kale, Pecan & Cranberry side salad with The Simplest Eggplant Lasagne in mind, and because something as tasty as this lasagne recipe needs no help from sides to shine, I kept it super simple with bold and fresh flavours. With the lemon tahini dressing, the flavour profile of this side is simply delicious. If you are looking for a fresh and filling lunch time salad or perfect side dish, this herby lentil and couscous salad is exactly what you need. I love taking inspiration from dishes I find in stores or on menus, and this recipe was inspired by my favourite Woolworths salad with Bulgar wheat and lentils. ROASTED CAULIFLOWER, CHICKPEA & KALE SALAD

I believe in eating a balanced Whole Food Plant-Based diet and it is something I strive to do every day. Although, I have noticed that I seem to share a lot of my heavier dinner recipes that not all of you may be into! I absolutely love heavier meals in the evenings because the sensation of feeling satisfied at dinner time is what I am usually going for. However, I am also all for a FAT salad over lunch to get in those greens and first portion of legumes for the day. So I have started developing a few easy and delicious salad recipes which are good enough to share with you all!
