It’s Earth Day! This hasn’t been a day I have put much thought into ever before, but this year a few things are different.

I no longer eat animals… yes, that is 100% where my interest in our environment sprouted from. I have been plant-based for nearly a year and along my journey I have become truly obsessed with learning as much as I possibly can about food, where it comes from, and what it does to our bodies, although, through this research I have found so much more than the answers to just those few questions.

I believe in eating a balanced Whole Food Plant-Based diet and it is something I strive to do every day. Although, I have noticed that I seem to share a lot of my heavier dinner recipes that not all of you may be into! I absolutely love heavier meals in the evenings because the sensation of feeling satisfied at dinner time is what I am usually going for. However, I am also all for a FAT salad over lunch to get in those greens and first portion of legumes for the day. So I have started developing a few easy and delicious salad recipes which are good enough to share with you all!

QUICK & EASY VEGAN PIZZA

Happy April everyone! I cannot believe we are already a quarter way through 2018 and I haven’t even chosen a New Years resolution yet! This past Easter weekend I was able to spend some time at my mom’s home in Durbanville, where I caught up on some seeerious down time. The highlight of this down time was definitely this pizza creation – think mushroom and caramelised onion, topped with crispy cheesy kale and avocado. I mean, yum!

EASY HOMEMADE VEGAN BAKED FALAFELS
